It's a painless process ... dh and I once went on a tour of a champagne house and at the stage before the sugar is added to the sparkling wine (there's a technical term but it escapes me!) the fellow conducting the tour took the top off the bottle with a sabre (really!). And I loved the taste because it had no sugar at all.
